Consumers' contemporary definitions of what is healthy have evolved from nutrition and calories to include local, natural, authentic, pure, organic, non-GMO, etc. Millennials are at the forefront of much of this change, and their desire for healthier diets and lifestyles doesn't end at the grocery store door. This generation values transparency and responsibility more than any other. But why?
